Indian sweet-Besan KI Burfi



Be it festivals or any special occasion, sweets are essential on every occasion. Whenever you want to make sweets, just make besan burfi with gram flour, ghee, dry fruits and sugar available at home.Its a traditional indian sweet recipe or a sweet fudge recipe which is mainly prepared with gram flour flour and sugar syrup. it is a common dry sweet recipe specially prepared in cold weather and during festival like diwali or navratri. Like any other barfi recipe, besan ki burfi can also be prepared by topping it with dry fruits like almonds and cashews.
The recipe for Besan Barfi is very simple, and requires very basic ingredients. This recipe involves roasting gram flour with ghee in a low flame till it turns golden brown in colour. After this a string sugar syrup is prepared. alternatively to prepare hard burfi is to make 2 string consistency sugar syrup. Later roasted gram flour is added to the hot sugar syrup and mixed until it becomes a thick paste.

Ingredients

¼ cup ghee
1 cup gram flour,
2 tbsp rava 
½ cup sugar
¼ cup water
¼ tsp cardamom powder
¼ chopped dry fruits

Instruction

 firstly, in a large take ¼ pan cup ghee and add 1 cup gram flour, 2 tbsp rava and roast on low flame. Stir well to combine without any lumps. Fry on a low flame till the mixture becomes paste-like and slowly turns fragrant. After 20-25 minutes, the mixture turns golden brown and the besan is cooked completely. Keep aside. Now in another pan/saucepan take ½ cup sugar and ¼ cup water.Let the sugar melt completely and boil for 8 minutes. After this a string sugar syrup is prepared. alternatively to prepare hard burfi is to make 2 string consistency sugar syrup. Later roasted gram flour is added to the hot sugar syrup and mixed until it becomes a thick paste.
Check 1 string consistency of sugar syrup, else boil further. Be careful as the sugar syrup will be very hot. Now transfer the prepared sugar syrup over the gram flour mixture. (turn off the flame) Make sure the sugar syrup is evenly mixed and thickened. also add ¼ tsp cardamom powder and mix well.Place baking paper in a plate and transfer the prepared dough.
 finally, store or serve besan burfi in an airtight container. Note that you need to add flour is added and mixed until it becomes a thick paste. Note that you have to stir it continuously while adding the flour, and no lumps should form. You can also add cardamom powder and finely chopped dry fruits in this step. Once it thickens, transfer it to a greased pan and shape it into square blocks. Your delicious Besan Burfi is ready to be served!
