Indian Sweet: Suji ka Halwa

 Suji ka Halwa:semolina halwa recipe | Suji Halwa | authentic temple style rava halwa with detailed  recipe. A traditional and mouth-watering quintessential Indian sweet recipe prepared with semolina, ghee and sugar. It is simple and prepared with basic ingredients, yet one of the delicious and aromatic sooji dessert recipes. It is generally prepared for auspicious occasions or served as prasad in temples, but can also be served as a simple dessert for lunch or dinner.Rava or semolina is probably one of the most important ingredients in Indian cuisine. It is used to prepare a myriad of dishes including breakfast, sweets, desserts and even main meals. Regarding the dessert, there are many types and ways it can be made, but the most common or popular option is Suji ka Halwa recipe which is known for its taste and simplicity.Simple ratio of 1:1:1 of rava, ghee and sugar. It is easy and simple to follow, but if you feel it might end up with too much sweetness, you can reduce the sugar (I have added ¾ cup sugar here). lastly, 
adding saffron or milk is optional and you can skip it if you don't like it. as an alternative to this, you can also add milk powder or cooking cream for better taste and richness.

Material

  • 1 cup ghee 
  • 2 tbsp almonds 
  • 2 tbsp cashews 
  • 2 tbsp raisins 
  • 1 cup rava / semolina / semolina (coarse) 
  • 2 tsp gram flour 
  • 1 cup milk 
  • 2 cup water 
  • 2 tbsp saffron water 
  • ¾ cup sugar 
  • ¼ tsp cardamom powder

Instruction

firstly, in a large kadai heat ¾ cup ghee. add 2 tbsp almonds, 2 tbsp cashews, and 2 tbsp raisins.
 Dry roast on a low flame till the nuts are crisp and golden brown in color. Keep the roasted dry fruits aside.
 Now add 1 cup rawa, 2 tsp gram flour and fry it on low flame.
Roast till the rava turns fragrant and golden brown.
In another vessel, take 1 cup milk, 2 cups water and 2 tbsp saffron water. I have soaked few strands of saffron in hot water for 10 minutes. Stir occasionally and let the milk come to a boil. 
Pour the boiling milk over the roasted rava and mix continuously.
Keep stirring till the rava starts absorbing the milk and becomes thick.
Cover and boil for 3 minutes or till the milk is completely absorbed. further, add ¾ cup sugar and mix well till the sugar dissolves. add fried nuts, ¼ tsp cardamom powder, and ¼ cup ghee.
 Mix well making sure everything is well combined and sooji is soft and fluffy. finally, enjoy suji ka halwa by topping it with more ghee if required.
notes:
  • firstly, make sure to roast the rava well, else the sheera will not taste good further, adding 2 tsp gram flour makes the halwa very rich and flavourful. 
  • additionally, once the milk is added, make sure to stir continuously, else there are chances of lump formation. 
  • finally, sooji ka halwa recipe tastes great when served slightly warm.
