It neither takes much time to make nor does it require much effort. You can easily prepare it in just 30 to 35 minutes. So let's know about this recipe.Kofta made of finely chopped spinach mixed with gram flour and tomato in a light spiced gravy of cream and spinach kofta curry, we can serve it with roti, parantha or rice.


Ingredients for kofta

For Kofta
  • Spinach - 200 grams 
  • Gram flour - 1 cup (100 grams) 
  • Green chili - 1 (finely chopped) 
  • Ginger - ½ inch piece (grated) 
  • Salt - 1/4 tsp Red chili powder - 1/4 tsp
For Gavi: 
  • Tomato - 4 (300 grams) 
  • Green chili - 2 (paste) 
  • Ginger - 1 inch piece (paste) 
  • Cream - ½ cup (100 grams) 
  • Oil - 2-3 tbsp 
  • Green coriander - 2-3 tbsp (finely chopped) 
  • Cumin powder - ½ tsp 
  • Asafoetida - 1 pinch 
  • Turmeric powder - ½ tsp
  • Coriander powder - 1 tsp
  • Red chili powder - 1/4 tsp 
  • Garam masala - 1/4 tsp 
  • Salt - 1 tsp or as per taste

Method

To make Palak Kofta Curry, we will first make spinach koftas. 
  • Clean the spinach leaves, remove the big stalks, 
  • wash the leaves with clean water, put them in a strainer to remove excess water and prepare the leaves by chopping them finely. 
  •  Take gram flour in a big bowl and prepare a thick batter by adding little water until the lumps are gone.
  • Add finely chopped ginger, finely chopped green chilies, 
  • 1/4th teaspoon red chili powder and half a teaspoon salt to the gram flour batter 
  • and mix all the spices well, now add chopped spinach and mix it well. The mixture for making koftas is ready.
  • Pour oil in a pan and heat it, when the oil becomes hot, take out a little mixture from the mixture, shape it into a kofta and put it in the oil. 
  • Put as many koftas as you can in the pan at a time. 
  • Flip them over and fry till they turn brown. 
  • Take out the fried koftas in a plate and keep them. 
  • Prepare all the koftas in the same way.

Make Gravy:
  • Put 2 tbsp oil in a pan and heat it.
  • Put cumin, asafoetida, turmeric powder, coriander powder in hot oil and fry it lightly. 
  • Add tomato, ginger, green chili paste and mix, 
  • add red chili powder and fry the spices on low heat until oil starts floating on the spices. 
  • Now add cream and fry while stirring continuously till the masala starts boiling.
  • When the gravy starts boiling, add 1-2 cups of water and while stirring continuously, cook till it starts boiling again. Now add garam masala, salt and some green coriander and mix.
  • Put the koftas in the gravy, mix and cover the vegetable and let it cook on low flame for 2 minutes. Vegetable is ready, turn off the gas. 
  • Take out the vegetable in a bowl and garnish it with green coriander,
  • Serve hot Palak Kofta vegetable with chapatti, parantha, naan or rice and eat.

Suggestion:

  •  You can make gravy in any other way, make any kind of gravy with cashew nuts or mawa,
  •  cream gravy or 
  • poppy seed tomato gravy and make vegetable by putting koftas in the gravy.For cream gravy, the gravy has to be cooked stirring continuously till it starts boiling.
