Cutlet recipe is a popular snack in Indian cuisine and there are so many ways to make them. These vegan vegetable cutlet are pan fried to keep them healthy, but as you prefer you can deep fry or shallow fry.

Ingredients of Vegetable Cutlets

  •  120 grams (chopped and blanched) French beans
  •  120 grams (peeled and grated) Bottle gourd
  •  120 grams Cabbage, grated 
  • 1/2 cup Carrot
  •  1 cup(boiled and mashed) Potato 
  • 1 tsp Cumin 
  • 2 tsp Ginger, 
  • finely chopped 2 tsp 
  • Coriander powder 2 tsp 
  • Mango powder 1 1/2 tsp
  •  salt 
  • 2 tsp green chilies,
  •  finely chopped 
  • 2 eggs (lightly beaten)
  •  1/2 cup maida bread Crumbs for coating the cutlets 
  •  1 tbsp oil 

Method to make Vegetable Cutlets

1. Finely chop the beans. 
2. Heat two tablespoons of oil, add cumin and ginger to it. 
3. Stir it lightly and add beans, gourd, cabbage, carrots and fry on high heat. 
4. Add green coriander, Add mango powder, salt and green chilies and stir it for some time. 
5. When it cools down, add potatoes to it. 
6. Make round or oval cutlets out of them.
7.Sprinkle flour on the cutlets, then dip them in the beaten egg.
8. Now coat it with bread crumbs. 
9. Once again dip the cutlets in the egg and apply the crumbs again. 
10. Fry them golden brown and serve them.
