Moong dal kachori 

  Ingredients to make Moong Dal Kachori

  • Flour - 1 cup
  • Moong Dal - half cup
  • Asafoetida - 1 pinch
  • Green chili - 1/4 tsp ground
  • Garam masala powder - 1/4 tsp
  • Dry mango powder - 2 tsp
  • Refined oil - 1 cup

  • Cumin - 1/2 tsp
  • Ginger - 1/4 tsp
  • grated Coriander powder - 1/4 tsp
  • Red chili powder - 1/2 tsp
  • Gram flour - 1 tbsp
  • salt - as per taste

Instruction

  Make Moong Dal Stuffing for Kachori:

  • firstly, in a bowl soak ½ cup moong dal for 2 hours.
  •  Drain the water and transfer to a mixer jar.
  •  pulse and blend to a coarse paste.
  •  Take 1 tsp ghee in a pan.
  •  Add 1 tsp fennel, 1 tsp cumin, pinch of asafoetida.
  • Sauté on low flame till the spices become fragrant.
  • further add ¼ tsp turmeric, 1 tsp chilli, 1 tsp coriander powder, 1 tsp garam masala, 1 tsp dry mango powder, ¼ tsp ginger powder and ½ tsp salt


  • Sauté till the spices become fragrant.
  • Now add ¼ cup gram flour and roast on low flame till the gram flour becomes fragrant. 
  • Add blended moong dal powder. 
  • Mix and cook for 5 minutes till the moong dal is well combined.
  •  Moong dal stuffing is ready.
  •  Keep aside to cool completely
Make Crispy Kachori:



  • firstly, in a large bowl take 2½ cups all purpose flour, ½ tsp salt and mix well.
  • Add 3 tbsp hot ghee and mix well.


  • Crumble and make sure the dough is moist.
  • Now add water and start kneading the dough.
  • Add water as required and knead to a smooth and soft dough.
  • Grease with oil and, cover and keep aside for 30 minutes.
  • After 30 minutes, knead the dough a little.
  • Take a small ball sized dough and tuck well.
  • Grease with oil and roll gently.


  • Place a small ball shaped prepared moong dal stuffing on it.
  • Pleat and seal tight. Remove excess flour.
  • Now roll slowly to make a uniform thickness.
  • Pour in hot oil, keeping the flame low.
  • Do not touch till the kachori starts floating on its own.

Notes:
  •  firstly, make sure to roast the gram flour well, else the gram flour will not taste good.
  • You can adjust the amount of spices as per your liking.
  • additionally, make sure to fry on low flame for even cooking.
