 Sabudana Kheer:
Sabudana Kheer is a very tasty sweet recipe which is mostly prepared and eaten during fasting. You can eat it even without fasting, it turns out to be very tasty, with the method we are sharing with you, you can easily make very tasty kheer.
 Most of the people have this problem in making sago kheer that this kheer either becomes very thin  or very thick. If you follow this recipe then you will never face this problem. And your sago kheer will always be perfect .so let's start.



Material 

Milk – 1+1/2 liters 
Sabudana (large grains) – 1/2 cup 150 grams 
Cashew - 10-15 
Almonds – 10-15 
pure ghee - 1 tbsp 
Sugar - 150 grams 
Raisins - Handful

Procedure 

1- First of all, we will put half a cup of sago in a bowl (use sago with large grains for best results).
2- Now wash these sabudanas thoroughly with clean water two to three times, so that the starch applied on the sabudanas is removed, now put a quarter cup of water in the same bowl and keep it covered for 3-4 hours to swell.
3- After 3-4 hours, when you see the sago, then the sago has absorbed all the water and each grain has blossomed. 
4- Now we will put one and a half liters of milk on medium flame gas to heat it and let the milk boil well.
When the milk comes to a boil, then we have to add milk to the sago (If you put sago in raw milk, there may be a problem of curdling of the milk) When the milk comes to a boil, take the flame of the gas and let the milk boil slowly. 
5- Now we will turn on the gas on the second gas burner and put a pan on the medium flame on the gas. And put a table spoon of desi ghee in this pan 
6- And put 10-15 cashews and 10-15 almonds in this ghee after cutting them and fry them for a minute, when the cashews and almonds are fried, they will be taken out in a vessel and



7- Switch off the gas and fry some raisins in the hot ghee itself, which will puff up the raisins and take them out as well.
8- Now in this ghee we will also put sago and after turning on the gas on low flame stir fry for a minute
9- Then in the pan we will put one and a half liters of warmed milk and in the milk we have to cook the sago on low flame for 4-5 minutes
10- Now we will put half a cup of sugar in this milk, it is perfect sweet for this kheer, now after adding this sugar, we will cook for 5 minutes
Now we will turn off the gas flame and put the dry fruits which we fried in ghee into this kheer and mix them.
11- Kheer is ready, after keeping it for 10 minutes, serve it.
