Indian Street Food: Vada Sambar

Vada Sambar / Sambar Vada is a very popular recipe from South India. And people eat it in the morning breakfast. Many people also call Vada Sambar by the name of Medu Vada. It is also good for our health that we use a lot of pulses in this, like we will use urad dal to make vada and chana dal .
So you can eat it with pleasure and can also feed it to your family members. It takes maximum 30-40 minutes to make Vada Sambar and it is ready. So let's see how to make Vada Sambar and what we need to make it…

Material:- for sambar 

  • Toor daal – 100 grams
  • Tomato – 1
  • Turmeric Powder – 1/4 teaspoon
  • Water – 3/2 glass
  • Oil – 2 teaspoons
  • Mustard seeds - 1/2 tsp
  • Asafoetida (asafoetida) – 1 pinch
  • Red chili - 1
  • Curry Leaves – 5-6
  • Green chili – 2 Chopped
  • Chili – 1
  • Tamarind water – 1/2 cup
  • Jaggery – 1/2 tsp
  • Salt – 1 teaspoon (as per taste)
  • Sambar masala – 1 teaspoon
  • Ghee – 1 teaspoon

For vada Urad

  •  Urad dal – 100 grams 
  • Green chili - 2 
  • Chopped Ginger – 1 inch 
  • Curry leaves 
  • Coriander leaves 
  • Coconut Powder – 1 teaspoon 
  • Asafoetida (asafoetida) – 1 pinch 
  • Rice Powder – 3 teaspoons
  • Salt – (as per taste) 
  • Oil (for frying)

Note:-

 If you want to make vada in the morning, then you put it in the night to swell. Or else it is necessary to swell the urad dal for at least 3-4 hours.

Instructions

1.First of all wash the gram dal and put it in the cooker and put tomato and turmeric in it.
2. Then put one and a half glass of water in it and close it.
3. And cook it on medium till it takes 5 whistles.
4.Now put the pan on the gas and put oil in it and put mustard seeds, asafoetida, chilies and curry leaves in it and cook it for a while.



5. Then put green chilies and onions in it and fry for a while
6. Then put tamarind water and jaggery in it and cook till it starts boiling.
7. Till then open the cooker and mix the dal well.
8. And put the dal in it
9. Then add water according to your choice and add chili powder and sambar masala to it.
10. Then put salt and a spoonful of ghee in it and cook it for a while.
And our sambar is ready and now we will make it bigger…

Medu vada 

1. First filter and grind the urad dal.
2. Then take it out in a big bowl and beat (mix) it for 3-4 minutes. 
3. Then add green chillies, ginger, curry leaves, coriander leaves, coconut powder, asafoetida, rice pow 4. Then mix it well. 


 
5. Now take it in your hands and make a round ball and make a hole in the middle of it with your thumb. 
6. Then put it in a hot pan and roast it till it becomes golden.
 7. And our vada is ready. 
8. Drain the vada and put it in water and let it swell for 1 minute.
9. Then squeeze it out of the water and take it out in a plate or bowl.
10. Then pour sambar over it. 
11. And garnish it with a little onion. And our Vada Sambar is ready. 
Serve it hot.

Suggestion:-

To make sambar, 
  • we should cook dal and tomato in advance. 
  • Don't cook the tomato along with the dal, otherwise if you add it while frying, then the taste of your sambar will change. If you want, you can also add carrots or any other vegetable to the sambar. Tamarind water and jaggery have great importance in Sambar. 
  • So definitely add it, this is the main test of sambar. 
  • To make vada, after grinding urad dal, beat it for a while without mixing anything. If you want, you can also put vegetables of your choice in it.
  • After making vada, let it soak in water for a while, it becomes more soft and it tastes better.
