Sabji-aloo palak recipe in hindi

 Aloo palak recipe in hindi:  Dry vegetable of spinach potato is very tasty. Minerals, iron are found in abundance in spinach, make this vegetable once a week, it is a good vegetable.I think it’s a universal thing – the love for potatoes! Isn’t it? You add it to cauliflower, you get aloo gobi. You add it to beans you get aloo beans and you add it to spinach you get aloo palak [aloo=potatoes, palak=spinach]

This Aloo Palak is one of my personal favorites. My mom used to make it a lot during winters when we would get really good fresh spinach in the market.

   Ingredients

  • Spinach - 500 grams 
  • Potato - 3 (250 grams) 
  • Mustard oil - 2 tbsp 
  • Asafoetida - 1 pinch 
  • Cumin - 1/2 tsp 
  • Turmeric powder - 1/4 tsp 
  • Coriander powder - 1 tsp 
  • Red chili - less than 1/4 tsp or as per taste 
  • Green chili - 2 (finely chopped) 
  • Salt - less than 1 tsp or as per taste

Method

  • Clean the spinach, remove the stalks, wash them twice with clean water, drain the water by keeping it in a sieve, when the water dries up, finely chop the spinach. 
  • Peel the potatoes, wash them and cut them into 1-1 inch pieces.
  • Put oil in the pan and heat it. 
  • When the oil is hot, add asafoetida and cumin. 
  • After roasting cumin, add green chilies, turmeric powder and coriander powder and fry the spices a little.
  • Now add potatoes and mix and add 1/4 cup of water, cover the potatoes and let them cook on low flame for 5 minutes.Stir the potatoes well, now add spinach, cover and let it cook again for 5 minutes. Check the vegetable, stir well. Add salt, red chili powder and mix.
  • Check if the potatoes have become soft, and some water is visible in the vegetable, then cook the vegetable without covering it so that if there is water in the vegetable, it dries up. 
  • Your spinach potato curry is ready.Take out the vegetable in a bowl.
  •  And serve and eat hot spinach potato dry vegetable, paranthas, naan, chapati or rice with anyone
