Indian Sweet: Gulgule

Gulgule Recipe:Eating jaggery and avoiding dumplings, you must have heard this saying, but have you eaten dumplings?Gulgule Pua Recipe is a very easy recipe. In Western Uttar Pradesh, the first dish the new bride cooks in the kitchen is sweet Puya or Gulgule Pua. These sweet puas are also made in religious functions and worship. Where malpuas are spread, the dumplings are in the shape of pua pakodas. If you like sweets, then you will like these sweet Gulgule Puye very much.



Ingredients for Gulgule

Wheat flour - 1 cup 
Sugar - ¼ cup 
Oil - for frying the dumplings 

Method - 

 Put sugar and 1/2 cup water in a pan and cook it till the sugar dissolves. 
 Dissolve the flour with this water. 
Prepare a batter by adding 1/2 cup water and flour. 
Whisk the solution until the lumps are gone. 
The consistency of this solution should be like that of pakodas, 
it should fall continuously when dropped from a spoon. 
Keep the solution covered for 10 minutes.
Beat this solution a little more. 
Also put oil in the pan and keep it to heat.
 Put 1 drop of the solution in the oil and check whether the oil is hot enough or not. 
It should come up after being fried immediately. 
Put Pua in hot oil with hand or spoon. 
Put 5-6 or as many puas as you can in the oil. 
As soon as the puas get roasted from the bottom, turn them over. 
Fry the puas on medium flame till they turn red and take them out. Prepare all the puas by frying them in the same way.
Eat hot or cold Pua (Gulgule Pua - Sweet Pua) with tea or in light hunger. 

 Suggestion 

If the batter is too thin, then the dough will become flat, it will not rise. If the batter is too thick, then the pua will not become spongy, it will become solid. Be sure to whisk the solution well. Pueys can also be made with jaggery instead of sugar. Puas made of jaggery will look more red.
