Ingredients for Bharwan Karela 

  • Bitter gourd (small) ——– 10 or 400 grams 
  • Oil ——– 4 tbsp 
  • Asafoetida ——– 1 pinch 
  • Cumin ——– half a teaspoon 
  • Turmeric powder ——– half a teaspoon 
  • Coriander powder ——– 2 tsp
  • Fennel powder ——— 2 tsp 
  • Dry mango powder ——— 1 tsp Red 
  • chili powder ———— half a teaspoon 
  • Salt ———— 1 tsp (as per taste)

Method - 

Wash the bitter gourds thoroughly. Peel off with the help of a knife. , Put half a teaspoon of salt in the shavings and keep it for 15 minutes. Cut the bitter gourd from the side but its other side remains attached. Now, with the help of a knife, take out the seeds and pulp from inside the bitter gourd in a plate, wash the peeled bitter gourd again (now-a-days bitter gourds are not very bitter, but If you don't like it at all, then you take out about 1 teaspoon of salt in it and put a little salt inside and outside the bitter gourd and keep it for half an hour, then wash it thoroughly with water and drain it.). Prepare all the bitter gourds in the same way.
Now wash the shavings thoroughly with water 2-3 times and squeeze out the water. Put 1 tbsp oil in a small pan and heat it. Asafetida in hot oil and add cumin, roast the cumin, turmeric powder, Fennel Powder Put Dniya powder. Fry after stirring with a spoon 2-3 times, add bitter gourd pulp, shavings, dried mango powder, red chili powder and salt to this spice. Stir the spices with a spoon and fry for 6-7 minutes. This roasted masala is ready to be stuffed in bitter gourds.
Fill each bitter gourd by pressing the masala. Fill all the bitter gourds with masala (fill the masala in such a way that it is evenly filled in all the bitter gourds). Put 3 tbsp oil in a pan and heat it. Put spices filled bitter gourd in oil and cover with lid and cook on medium gas flame for 6-7 minutes, open the lid, flip the bitter gourd and now cover again, again cook bitter gourd for 5-6 minutes, open the lid and see the bitter gourd Cook on a surface that does not bake them face down.
Put 3 tbsp oil in a pan and heat it. Put spices filled bitter gourd in oil and cover with lid and cook on medium gas flame for 6-7 minutes, open the lid, flip the bitter gourd and now cover again, again cook bitter gourd for 5-6 minutes, open the lid and see the bitter gourd Roast the surface on which they are not roasted facing down, put the roasted bitter gourd on the side and the less roasted bitter gourd in the middle. Roast bitter gourd till it turns brown, stuffed bitter gourd is ready.
Take out the bitter gourds in a plate or bowl. Stuffed bitter gourd is ready. You can serve them with puris, parathas or chapatis and eat them.
